Lunch Today

Kale, Tofu, Zucchini, Orange Peppers, Asparagus and Brown Rice
with Red Pepper Flakes and a yummy Ginger Sauce.

I wanted to blog today, but realized I wouldn't have time for anything with quality. 
So, I am sharing my lunch.

  1. That looks really tasty. I'm not a big kale eater but mostly because I just haven't done much with it. Do you use it raw for a salad like this or is it blanched?

  2. Oh, I just LOVE kale.....not nearly as much as peanut butter, but it is the shit. I drink it every morning by blending the shit out of it the blender with Hemp Protein and tons of fruit. You can't taste it (not that I would mind if you could), I chop it up in my salads, and I put it in stir fry and tofu scrambles.

    Such an odd odd girl. :)
